odd that recent posts seem to all be about cooking! I've been doing it a lot lately, home made biccies and treats for the girls rather than buying.
This arvo I made banana pikelets again, a good way to use up those ripe bananas, give the girls a relatively healthy feed plus tomorrows breakfast lol.
I also made chicken, bacon and camembert parcels for tea. Along with roast spuds and cauli and broc au gratin. So the oven is on and i have just reheated a bag of frozen Amish Cookies and now in is a tray of sultana and white choc cookies. So the biccie tin will be full again. I've made a couple of batches of biscuits that make heaps and freeze them in to rolls. Then when we need some biccies or the oven is on I can pop a tray in to cook. Heaps easier and cheaper too. There's some fabbo bulk recipes out there.
What else... hmmm oh I know! I am going to Melbourne!!! YAY. Going to this
and the best bit is I am not going alone. When I started teaching scrapping classes last year, my bestie from way back started coming along, so she is coming with me. We will only go for the day as it is so close to Christmas, plus child care - she has 3 little ones. So we will head over and back and no doubt come home exhausted after a full on day. Of course that is assuming I get tickets when they are released next week. It will be limited numbers.
Work is going really well. I feel much more settled there now and can actually think about the extra things that need doing. I have working mainly in recovery which i like, done admissions and doing that again tomorrow. That is really brain taxing. Busy getting people sorted out for in and then getting organised for out. I did a quick stint in the proc room last week doing anaesthetics, pretty scary when you haven't a clue what you are doing and not getting much help from anyone in there! Oh well, no one died lol. Yes thats the yardstick. So back tomorrow, am getting plenty of work, more than i want really. Could easily do 5 days a week inc overtime. I have a feeling that tomorrow night will not be an early one!
Jamie is busy too, a fair bit on which is great. We have money in the bank which is a cool thing! Not for long lol as GST is due next Monday!
Its hard to believe that 2 months ago we were in QLD. It was the best holiday, just awesome family time. Very good memories. But things have been so so hard since being home. Not just for us, in fact what we've been going through is nothing compared to some of our very dear friends. It's certainly been challenging to my faith. But I know God is good, good will come, He promises that. I also believe strongly for a restored relationship, but in time. His time not ours.
Well thats it, a rooster just crowed lol. Actually it was Bethany hehe. Her and Mia are playing in the lounge room, and it was bed time so she put her and Mia to bed and the lights off so the rooster crowing was morning time lol. Funny kids. They tend to play well this time of night. We've normally had tea by now but it took a while to get it in the oven, plus i don't want to interrupt them! Ha, she just gave Mia a lollipop (pretend one) for breakfast! She wishes lol, not in my lifetime!

Because I've Lost My Recipe Book...
i'm posting this recipe here. It's Banana Pikelets from Symply Too Good No 1.
Mix 2 egg whites and 1/4C sugar. Add 1 1/4C SR flour (I use wholemeal), 3/4C skim milk. Mash 3/4C banana (i use whatever on old) to that add 1/2tsp bicarb. Add banana to rest and mix.
Cook... easy peasy. Makes a lot and are good for the kids. Great breaky food.
Now to cook some more food for the freezer. Probably corn and bacon muffins for my work lunches. Maybe some choc chip biscuits as well.

Some days
this parenting gig is hard hard hard work and I want to put in my resignation! Of course I don't really, but its these days that I look forward to bed time. To many tantrums today and not just from the kidlets ;) I'm tired and the house is a mess, its when jamie is away that working gets to me. But a day off next week yay. I am working Tues and Fri, so thurs while the girlies are at day care, mummy will be at home. w00t!!!!!!!!!!!!!
